Begin by pressing the tofu to remove excess moisture. Wrap it in a clean kitchen towel or paper towels, and place something heavy (like a cast iron pan) on top for about 20 minutes. This step helps the tofu absorb the marinade better.

In a mixing bowl, combine garam masala, ginger garlic paste, lime juice and chilli powder. Whisk all ingredients together until well combined.

Cut the pressed tofu into cubes or slices, depending on your preference. Add the tofu to the marinade, ensuring each piece is well coated. Cover the bowl and refrigerate for at least 30 minutes to 1 hour (for best results, marinate overnight).

To cook in the airfryer - 180c for 6-10mins, pan fry - cook for a few mins on each side until browned and crispy
