Maximum Flavor

Adobo Power: Don't just use the chipotle pepper! Spoon in an extra teaspoon of the smoky adobo sauce from the can for a massive, concentrated flavor boost.

Press and Score: Thoroughly press your tofu, then use a knife to lightly score the surface. This creates tiny channels for the zesty lime and smoky chili to penetrate.

The Citrus Finish: The heat destroys some of the fresh lime notes during cooking. Squeeze an extra wedge of raw lime over the tofu right as it comes out of the pan to revive the zing.

Why this recipe works

Acidic Breakdown: The lime juice softens the dense outer layer of the tofu, allowing the robust spices and smoky oils to soak past the surface.

Sugar Caramelization: The chipotle adobo sauce contains natural sugars that rapidly char and form a BBQ-style bark under the intense heat of the air fryer.

Flavour profile

The Base: Earthy, smoky adobo and chipotle peppers.

The Zing: Fresh lime juice cuts through the heat.

The Spices: Cumin and paprika add a savory, warming depth.

How to use it

Taco Filling: Creates a deeply flavorful, smoky protein for Mexican night.

Salad Topper: Add cold to a black bean and corn salad for a zesty punch.

Fajita Bowls: Serve over cilantro-lime rice with sautéed peppers.

Why marinate tofu?

The Acid Factor: The high citric acid content in lime juice helps break down the outer surface of the tofu, allowing the smoky chipotle oils to sink deeper into the core.

Smoky Char: Chipotle peppers contain natural sugars that caramelize quickly under high heat (like an air fryer or grill), creating a "bark" similar to BBQ.

Versatile Umami: While Mexican-inspired, the smoky-salty profile works as a powerful protein base for everything from tacos to protein-packed salads.

Serving Suggestions and Pairings

This smoky, zesty tofu is perfect as the star protein in a vibrant Mexican-inspired bowl. Serve it over a bed of cilantro-lime quinoa, alongside black beans, roasted corn, and sliced avocado. It also makes a fantastic filling for soft corn tacos, topped with a fresh tomato salsa, shredded cabbage, and a drizzle of vegan sour cream to balance the chipotle heat.

Ingredients for Chipotle lime tofu marinade

How to make Chipotle lime tofu marinade

  1. For the best results, wrap your extra-firm tofu in a clean towel and place a heavy weight on top for 15 minutes. Removing excess water allows the marinade to soak deep into the block rather than just sitting on the surface.

  2. In a bowl, combine the lime juice, adobo chile pepper, paprika powder, cumin, garlic powder, oregano, a pinch of salt and a splash of oil.

  3. Cut the tofu into 2cm cubes and toss them in the marinade. If you have time, let it sit for 30 minutes. The acidity in the lime juice helps the spices penetrate the tofu.

  4. Air Fry: 180°C for 6-10 minutes, shaking halfway. Pan Fry: Medium-high heat with a little oil until all sides are golden-brown and slightly charred.

  5. Serve with a fresh sprig of coriander and an extra wedge of lime to brighten the deep earthy spices.

Storage and Freezing

Store the marinated, uncooked tofu in the fridge for up to 5 days. You can also freeze the tofu in its marinade for up to 3 months; freezing actually helps the tofu absorb more flavor and improves its chewy texture once thawed.
