slice up the red peppers and onions into small pieces, then cook in a pan for around 5-10 minutes until they are soft

place the cous cous into a bowl and add the vegetable stock to the cous cous and let it soak in for around 5 mins. Add the lemon juice also. Fluff the cous cous with a fork

chop up the feta cheese and add this to the cous cous along with the cooked onions and peppers to the cous cous and a dash of olive oil
