Instructions

begin by boiling the udon noodles in a pot of water according to the packet instructions or until slightly soft

while the noodles are boiling begin mixing together the peanut butter, water, lime juice, soy sauce, sesame oil, honey, salt, garlic and ginger to make the peanut sauce

drain the noodles once cooked and then coat with the peanut sauce

mix in the carrot, cucumber and spring onions, top with the roasted peanuts and coriander
